family recipe.



meet jenny. and jenny's mom. this was taken right before jenny walked down the aisle at her wedding this past spring. they look amazingly not nervous. crazy, i know. 

jenny's mom's caesar salad is a favorite in my group of friends. even h asks if it's "regular caesar," or "jenny's mom's caesar" salad. jenny even carried the recipe down the aisle as her "something old." ok, ok. that's a lie.


i'm sharing it with you because i no longer buy bottled caesar salad dressing and you deserve to know why.


jenny's mom's caesar salad
(right from the horse's mouth)


ingredients:
1/3 cup olive oil
2 tbsp lemon juice
3-4 garlic cloves, minced or pressed
sea salt & pepper
1/4 tsp mustard powder/dry mustard (hope there's no difference)

1 tsp worcestershire sauce
1 package/head romaine lettuce
1/2 cup parmesan cheese, shredded
croutons
1 raw egg, beaten
cooked chicken strips or sauted shrimp (optional)

directions:
  1. in a small bowl, mix together olive oil, lemon juice, garlic, salt & pepper. let sit as long as you possible can wait until you are ready to start eating (20-30 min?). the flavors need time to meld together.
  2. add dry mustard and worcestershire sauce and stir. 
  3. add romaine lettuce to a large bowl and mix in dressing.  
  4. add parmesan cheese and croutons and toss until coated. 
  5. add beaten raw egg, toss until coated (i add a little at a time, and don't usually use the whole egg). top with chicken strips or sauted shrimp if desired.
  6. serve IMMEDIATELY. ( : and don't tell your squirmy boyfriend there's raw eggs or he will be scared to eat it.

Yum! I love Caesar salad...especially with chicken or shrimp!

Even better...there's nothing anchovy-ish about this recipe (which will please my husband). But, from watching Alton Brown on Good Eats I learned that anchovies really aren't part of a good Caesar dressing, but....

Anyways, if you want to carry the 'raw egg' theme, I bet this salad would be GREAT paired with Spaghetti Carbonara. Mmm.
