just made jen's mom's famous caesar salad. i wish i could have taken a picture, but it was gone before i could say "dinner's ready!"
this recipe definitely deserves a share. i felt a little weird about the raw egg, but e told me not to think about it ( : it was delicious!
nancy's caesar salad (+chicken)
ingredients:
1/3 c. olive oil
2 tbsp lemon juice
3 cloves garlic, minced
dash of sea salt & cracked pepper
1/4 tsp ground mustard
1 tsp worcestershire sauce
1 head romaine lettuce
1 c. chicken slices/shreds (i used about 1/2 a small rotisserie chicken)
1/2 c. shredded or shaved parmesan cheese
1 egg, beaten
directions:
in a small bowl, combine olive oil, lemon juice, garlic, salt & pepper. let stand 1 hour. add in mustard and worcestershire sauice. stir, then add in torn pieces of romaine. add parmesan (i used shaved pecorino romano) and croutons and toss until well coated. add in the raw egg, toss until well coated. serve immediately.
